This is my version of a Mai Tai, with a strong and punchy hit of blood orange liquor. I love the fact that this one is so fresh and fruity, yet you can get a real taste of the alcohol in it. It works really well with a spicy curry, just don't drink it too fast...
Ingredients: Dark Rum, Sugar Syrup, Blood Orange Cointreau, Fresh Lime, Pineapple Juice
1. In a jar, add 50ml of dark rum
2. Add a splash of the blood orange cointreau. This stuff is punchy, so go easy.
3. Add a dash of sugar syrup, a wedge of lime - fill with ice and top with pineapple juice.
4. Give it a good shake and garnish with a wheel of lime.
